SHALLOTS
Key’s of Lincolnshire are one of only a handful of commercial growers of shallots in the United Kingdom. Our growing year starts in February as soon as the soil starts to warm up and as a specialist crop, shallots require great care and attention from start to finish. We grow many different varieties including banana shallots which get their name from their unusual elongated shape.

Shallots are often thought of as a variety of onion but although closely related they are actually a species of their own, belonging to the lily family. Sweeter and more fragrant than onions, shallots have a distinct and delicious flavour and they add flair and sophistication to cuisines from all around the world. We use our own shallots pickled in sweet balsamic vinegar. They are no longer used just as an added ingredient but are now recognised as a vegetable in their own right, such as caramelized shallots which are particularly good as a side dish to accompany braised poultry or meat.
